So, Im guessin youre in High School. I was a competitor in the Science fair Regional's last year, and placed pretty well. I'll tell you one hint about Science Fair.

-The Project dosn't have to be great, it dosn't have to be something completely new ( though it sometimes is). Your Project has to be thoughtful, it has to concern a real world problem, and it has to be experimented out completely.

One girl I saw last year won the Physics division with a project that tested the shape of an Airplane wing, using a windtunnel.

So, since you havn't given me any information about what genre you want to go to, ill tell u this, "Play to your Strengths" (Harry Potter quote).

One simple and kinda fun science experiment I did was on mold. I grew different kinds of mold in different environments (fridge, by a heat source, ect.). Another good one is acids and bases. You can find plenty of tests for acids and bases in experiment books in any library. I made a liquid indicator from purple cabbage cooked in water and tested liquids and other items for acidic and basic properties according to what color it turned. Acids turn pink and bases turn blue/green. There's more to it than that, if you are interested and do some research.
