Those who do not believe the Bible is true are deceived by Satan, the "father of lies", whose main agenda is to keep people away from the Truth least they be liberated from the clutches of deception and the veil of deceit is lifted from their eyes. Hence, the primary demonic strategy is to disprove the Bible as true and aid humans via demonic revelation in falsifying and fabricating diversions, i.e. "The Lost Gospel According to Judas." This is why everyone does not believe in the Bible, and why everyone is not Christian.

What the Bible preaches cannot be fully and completley proved. That's why it is said that trust is an important element. If we would be able to prove everything that the Bible says and consequently determine everyone to adopt the path of christianity, then spirituality wouldn't be a matter of trust anymore, would it?

We have to gain trust in order to prove we're worthy. If we have all the proof we need, then what's the use?
We are given hints and evidence just enough to make us cling to the idea that they might be true, but this evidence always leaves some doubts hanging inside of us. Well, those doubts represent our choice, what we choose to do with them represents us.

It's like when you're walking in a completley dark room and you suddenly see a light in one of the corners, but the light you saw was so pale and weak that it even makes you doubt you saw it. So what do you do then? Do you get out of them room or follow the light, even if you know that it might not exist?

That's a matter of trust.

It is to personal belief as to consider Bible true or not. With the passage of time and a mixed effect of cultural and regional surroundings people of different communities have developed different faiths and ways to respect 'the image' of God. Christians is a a similar group which believes Bible is true; for Muslims it is Quran and for Hindus it is Geeta. Therefore the statement that "Bible if true.." is very subjective in itself. This may answer your question as to why many people look at religions and related scriptures from a different point of view.

People tend to believe what they want, true or not. Some people think humans were created by God, others think we evolved from apes (which poses the question: Then why are there still apes?) The Bible is a history book written by period people about things that happened. When you compare it to other books dealing with periods in history, you will find many similarities. After you research, the question is, What do you think, because that's all that matters?

I think you answered you own question with your question. We don't know what is true and what is just a story. Just because that someone has told us this is right doesn't always make it so. There is an old saying that you can't believe everything that you read. I believe that this does apply to the bible as well

Since before the Englightenment of the 1700s, the Bible was THE BOOK. Everyone followed it and there was NO EXCUSES if you disobeyed parents and such

And since the Enlightenment, people have started really thinking about God and Athiesm and started working with science.

Many reasons. They could be from a completely different religion, that has its own writtings. Or they could simply find some of the things in the bible suspect. a bigger question behind it is 'why do people believe in anything?' faith? culture? optimism? science? proof? One really can't worry about why some people believe in different things. Like the saying ' to each, his own.'. as long as no ones pushing you into believing, why worry? And if they are, then it is as simple as 'I have many reason too.' and leaving it at that. each person has their own history and their own reasons. you just can't narrow it down to one.

People feel guilty. Kind of like if you get in a fight with your spouse and have said some nasty things. Your spouse may be absolutely right but because you feel so bad about what you've done you don't want to go and talk to them. Also, if they were to admit that the Bible were right, they would have to give up their sinful lives.
