usually pumpkins last about a week once they've been carved.

Probably not. It depends on your weather for one thing. If it's pretty cold where you are that will help preserve the carved pumpkin. Warmth & sunlight will rot it in no time. Once a pumpkin is carved, cover it with plastic for a day or two to help keep moisture in the pumpkin. Of course it would be ideal if you could keep it in a refrigerator if you have the space.
Ideally, it's best to wait until 2-3 days before Halloween to carve the pumpkins. There are things that you can do to retard decomposition. You can spread vaseline on all the cut parts on the pumpkin, and spread it inside, although that can be pretty messy. I have also heard about using WD-40 on the cut parts, but I don't remember any of the details. (Just remember to be careful using these products because of combustability, although as far as the WD-40 goes I think it's the vapors that are the worst.
If your cut pumpkin does get shriveled it can sometimes be revived temporarily by soaking it in a bucket or bathtub of cool water for several hours, then draining thoroughly. Try to keep carved pumpkins off of concrete as concrete pulls the moisture out of the pumpkin. Put a layer of plastic underneath such a a plastic bag or plastic wrap on newspapers to prevent moisture loss.
Also, be sure that you cut a hole in the top of the pumpkin so heat from light or candle can escape.
There are commercial preparations that you can buy: http://www.pumpkinfresh.com/ (I am in no way affiliated with this company)
Hope this helps!

I just read where if you use petroleum jelly (brand Vaseline) on the carved part of the pumpkin, it will keep the area from spoiling so fast.
