Can the pursuit of democracy be democracy's ultimate undoing.?

I don't know in what context you mean that. So I can't really think much about it. There are a a lot of ways to pursue democracy or anything for that matter and not all will work.

Happened once, can happen again

Second example. Reckless pursuit of individual rights and priviledges led to the anarchisation of the Kingdom of Poland. Today BTW is the anniversary of the Third partition of Poland- between Russia, Austria and Prussia.
