You can go three minutes without air.
You can go three days without water.
You can go three weeks without food.
"Without serious consequences" has more to do with your biology. How much you weight, your rate of motabolism, tec... all help to determine that. Keep in mind, however, that through your body has fat reserves, it needs vitamins and minarals to work efficiently. So, through you may be able to survive for a long time without food, expect extensive organ failure much earlier than the 3 week mark.
