I have read in wikipedia that July 7, 2007 is a date that most people are ASSUMING the publishing date will be. This has not been confirmed by JK Rowlings.

It's commonly believed that the final book is going to be released in 7-7-2007. It's the seventh book, the seventh year of magic, the seventh Horcrux is going to be revealed in it. And that is just the perfect date.

they always come out in the summer time to promote grade school reading. usually july. the last book comes out in 2007.
