"Road apples" from the horses, leather, sweat, grass or grasses (alfalfa, hay and the like) and a freshness to the air, untainted by industrial pollution.
(A lot also depends on where I am in town and the kind of town. For example, a seaside town will have a salt tinge to the air; a mountain town will have a pine back-scent, a lumber town the smell of freshly-cut timber)

home-made bread, coffee, fresh cooked meat, cigarette smoke, and horse crap oh yea and maybe my body odor since bath tubs weren't available, due to no indoor plumbing (sorry that made six scents)
yes i did say horse crap since there were few if any vehicles around.
