Too many questions, but I'll give some info on the most interesting one, Benard cells, and you can look up the rest. (I'd suggest browsing the numerous sites devoted to paint companies and their FAQ.)
Benard cells (see ref. 1) are sometimes hexagonal, sometmes irregular convection cells that occur in shallow (~1 mm depth) liquid films, similar to the rectangular Rayleigh cells you can see in a larger depth fluid such as a bowl of miso soup! Benard cells can show up in painting when solvent evaporation sets up the conditions for convection (see ref. 2).
