What you're looking for is called legal writing class - and it's available from any number of commercial providers, as well as from almost all the colleges and law schools in the area. An alternative to taking the class is to simply read the blue book, which is available at any large book store.

However, if you're thinking of writing materials for the New York State courts, the blue book does not apply. The New York State court system has come up with its own variant, which is available on the court system's website.
