Depends on where you work and what you are handling. Some restaurants require all kitchen employees to wear hairnets, while others dont as long as your hair is pulled back and not on your shoulders. If you do wear a hairnet it is most likely recommended by your company to keep all of your hair in it.

I waitress and I don't wear a hair net, however I do have my hair pulled back in a pony tail or something like that. But I do know that ALL of the kitchen staff either has to wear all of their hair in a net or a hat.

I've never needed to wear a hair net when I worked in food service. I did have to make sure my hair was back. I'd keep it in a ponytail and wear the required hat.
