Because the spray when you chop gets in the mouth and makes you cry. So if you close your mouth when chopping, you won't cry.

You can prevent that by running cold water from the tap while you chop the onion near by. I have no idea how that works but it does! Try it! :)

The onion contains some substances which contain sulfur. Sulfur is an irritant to both our noses and to our eyes. Cutting an onion releases these sulfur compounds. When these sulfur compounds come in contact with the water in our eyes, they produces sulfuric acid.

Sulfuric acid irritates the eyes. In response to this acid, our eyes automatically blink, and produce tears which wash the eye and flush out the acid.

Most people cry while cutting onions, because they are so strong, and they have a strong scent. I hear the if you put them under water, then they are not as strong.

volatile compounds released from the onion are irritants to the eye...peel or chop it under water to prevent this.

I don't know why - there are some good answers but I do know if you put a piece of bread in your mouth while chopping it, you won't cry...
