In Star Wars, how are lightsabres created, the colour, the laser effects, everything, the compartment type thing the beam comes out of?

If you're asking about how the effect is done, its called "rotoscoping" as for the hand held object, they probably just use a crafted toy, with a wooden stick poked through it for the contact realism.
As for the sound effects, any number of software programs could have been used.

The lightsaber effect is created using a technique called rotoscoping. They basically film the sequence with sticks and then digitally 'paint' the frames that the lightsabers need to be in. Its a long laborious process but it looks great. For an entire film that uses this process, see 'Waking Life' or 'A Scanner Darkly', both directed by Richard Linklater.

I'm not sure, but they probably just used simple sticks and added the light effects in post-production. I know they made the sound effects by waving a microphone back and forth in front of a speaker producing a 60-cycle hum.
