You will definitely not want to spend more than a day in Gibraltar. I'd recommend doing a bit of a road trip.

Granada is a fantastic city, with a good social scene and one of the world's most impressive monuments: the Alhambra. Don't miss that.

Ronda is a lovely town perched on a gorge. It is the start of a series of "white towns" (pueblos blancos): whitewashed villages in the mountains that make for a beautiful drive.

For the beach, the Costa del Sol is lame: over-built towns filled with sun-burned Brits. For a better, more authentic experience, try the Atlantic Coast at Tarifa.

Don't forget my favorite city in Europe: Seville. The tapas bars and sherry tavernas make this city a perfect joy. There are sights to see, but for the most part, it's all about eating, drinking, meeting the locals, and enjoying the good life.

I'd spend two days in Granada, three days in Seville, and two days on the beach in Tarifa. Drive through Ronda on your way!

I dont think there is much in Gibraltar for a whole week. Marbella is nice and Puerto Banus, also old Marbella town. They are very near to Gibraltar if you want to do a day trip there. Southern Spain has more to offer for a week.
