I am conducting some research into working as a secretary / PA as a career and wondered how many secretaries / PA's actually worked in London as there are so many job sites specialising in that area!

Plenty! I'm a PA working in Soho area and earning excellent money for the type of work, when compared to other entry level admin roles such as receptionist. The best site I used when I first arrived from Australia was http://www.secsinthecity.co.uk/. You can upload your CV and the agencies will call you if they're interested in meeting with you. It also has links to most of the big recruitment agencies. I was called about 6 times for interviews and only had about 1 years actual PA experience. Money for first time secretaries/PA depending on your skills should be around £10 per hour, as long as you can type, answer the phone - all those terribly difficult (not) skills. Good luck!
