Wait until all the flower petals have fallen off and you can see the seeds. Cover the head of your sunflower with a brown paper bag to stop birds from eating your seeds. As soon as the stem starts drying out you can cut off the head and take out the seeds. That way you will have enough left to plant instead of giving it to the birds.
