Which one is correct and why?

you can say a lion (A) if you are reffering to a specific animal (if you have a pet lion). but B is more likely

The lion. You need an article, and putting 'a lion' would restrict your favortisim to one specific lion (unless that is what you mean. You could say that your favorite animal is a dog, for example, and go on to say that you love your pet dog more than any other animal on the planet).
However, it is also correct to say that your favorite animals are lions. Weird, English, isn't it!
