Here are the instructions. I hope that they work for you.
Uninstalling Internet Explorer 7
To uninstall Internet Explorer 7 and restore Internet Explorer 6 when using Windows XP or Windows Server 2003
1. Click Start, and then click Control Panel.
2. Click Add or Remove Programs.
3. You might have to CHECK the box that says SHOW UPDATES
4. Scroll down to Windows Internet Explorer 7, click it, and then click Change/Remove.
If you cannot find Internet Explorer 7 in Add or Remove Programs, click Start, click Run, type
%windir%\ ie7beta3\ spuninst\ spuninst.exe.
(I added spaces after the \ so it would show here)
and then press ENTER.
For more information, check this page at the Microsoft website. http://msdn.microsoft.com/ie/releasenotes/
If you have further trouble, you might try the RESTORE thing in the System Tools folder and go back a few days before you made this terrible mistake.
Good luck

what exactly do you dislike about it.... it is actually VERY customizable. If you keep it as the original standards.. its a pain in the *** to adjust from v.6 or earlier. 7 has everything the older ones had jsut in different positions. Print/Tools/HomePage/Help/etc is now on the right side. Find is located just under the "X" to close the screen. The Tabs... you can change this to be the way 6 and before were so that you open windows not just tabs. .... however... if you want to delete the version... go to CONTROL PANEL/Add-Remove Programs and find the explorer version. In XP, you can actually just delete specific versions as opposed to the whole program.

If you have XP I think you have the option to delete new installations. Otherwise go to "start" "settings" "control panel" "add/remove programs" and delete it from there.
Try here for 6:

I think they did a piece on CNET describing how to install a program that will block Microsoft from automatically updating your browser. Use Firefox, it's a much more secure broswer.
