Evolution in humans is quite slow. Since it takes a minimum of 12 years for each step, it isn't nearly as fast as if you were breeding mice. It's also hard to recognize a successful mutation at such a young age. Humans do evolve. The best example of this is in athletes. They are stronger and faster than a generation ago. This is easily confirmed by looking at records.

Now if you meant why can't people adapt, they can. We do it all the time. Adaption is a human strength.

People to evolve. Two example the evolution of man, from ape- like creature to now. Secondly if you look at the average weight of babies from the last 50 years, the weight is increasing. It is also well documented that women's breast sizes have gone up. This would help attract mates, evolution.
Or are you talking about individual people over a life time? If so they evolve to, look at teenager i can almost guarantee they won't act that way in 20 years.
