Is there a way to remove your ip address from email headers when sending an email? To make it anonymous?

Anyone that really wanted to know your IP could get it with or without the email header, so removing it wouldn't serve much purpose.

You'd have to find an email server that won't record it and that will let you connect to it. The email server knows your IP because it is talking to you, and if it chooses to record it, there's nothing you can do about it.
