I got my car's error codes read at a local auto parts store. It came back as P0128. I was told it could either be a thermostat or a temperature sending unit. The temperature seems to be fine - running in the normal range.

Any thoughts on how I should procede? Should I try changing one then the other or both at the same time? If one then the other, which one should I change first?

Change thermosat first, its cheaper. Before you do that unplug the temp sensor and then reconnect it. It could be a dirty contact.
