You can actually use your chopsticks to cut certain foods but it takes some getting used to.

otherwise you can ask for a knife

yes you are supposted to eat the food as it is served with chopsticks
Chinese food is prepared in bite sized pieces for this reason
enjoy.
If for some reason you cannot use chopsticksw as for a fork or spoon
you don't need a knife either way
if the food is too large to eat a bite at a time it will pull apart very easily

Usually the meat at a Chinese restaurant is already in small pieces & it is also usually very tender. I have never had occasion to need a knife while at a Chinese restaurant. But, if you feel you really need one, just ask the waitress.

If it's long noodles, just slurp 'em up making the most disgusting noises possible. That's how it's done. You can also cut some foods as mentioned, but it is a talent...

when you go to a restaurant you are expected to be served with whatever you need so ask for the utensil and if they dont want to serve you with whatever you want, chances are you wont return there so if i know them like i do...(1/4 Chinese) they want you to come back!!! Ask for one...lol... and if they dont then demand to leave ...lol

Either ask for one, or just pick it up and shove it in your mouth with a pair of chopsticks.
