Enroll in a program at a respected college of alternative medicine.
Here in the Seattle area is Baystyr University. It has a good reputation. http://www.bastyr.edu/

Some community colleges have some personal interest classes in natural remidies and herbal medicines. Some schools offer certificates in herbal medicine. That way you can explore that career option without spending thousands of dollars.

A good way to go would be take a science emphasis course of study at a junior college - taking the biology, anatomy, chemisty, and other 100 & 200 level classes science that pre-med majors normally take, and THEN look into schools like Baystr in Seattle.

Good Luck!
