The best would be Cingular it offers free weekend and nights and a nice prepaid minutes rate.

They have a prepaid plan that is automatically debit out of your account monthly, there is no contract so you can cancel at any time, you can also set it up to come out of your account whenever your minutes get low. This plan offers unlimited nights and weekends, mobile to mobile and rollover minutes. Look into it, it great I know a few people who have it.
