Depends on the operating system. In Windows XP, just hit Ctrl-Alt-Delete.

A task list will come up (or a window that has "Task List" as an option) and you can choose to end tasks. You can also switch over to "Processes" tab if you want to kill a process.

Try using the Control Alt Delete method. You need to hold down the 3 keys mentioned. Then, depending on what operating system you have, select Task Manager. You should see all your running programs under the Applications tab. Select the one you want to stop and click End Task. If that doesn't work and you know the process you want to end, instead of clicking Applications, click the Processes tab and find the process. Select it and click End Process. Only do this if you know for sure that it is safe to end the process that way. If worst comes to worst, reboot.

Anyway, about your question: Ctrl+Alt+Delete, and go Processes. Look for the one you want and click End Process.

Be careful if any of the processes you're selecting are being run by "SYSTEM". Usually the "system" won't let you end these, because these are core programs needed to operate windows. Otherwise you should be fine.

I assume you mean the programs that start and keep running well there is a way too stop this

start>Run>type in msconfig>then look for start up.

Just remember this if you dont know what it is don't stop it and if you stop it and something stops working start it again.
