when you have two stitches on your right needle, lift the first stitch you knitted up and over the 2nd and off the needle. Knit another stitch from your left needle and repeat the process until you have one stitch left on your right needle. Pass a tail of yarn through the remaining stitch and draw up tight, weave the tail in to hide. Many people find that they bind off too tight so you may want to use a larger needle than what you knit the project with to help make sure you bind off loose enough.
