They arrange in layers because:
1. stess will reallign platy minerals normal to the stress
2. surface tension of minerals will bring like mineral to like mineral, so mafic minerals will migrate to mafic minerals and felsic minerals will migrate to felsic minerals.
Hence mineral segregation or layering. NB. the hotter the metamorphic event the stronger the layering, due to mineral plasticity.

Hi. Metamorphic rock layers can sometimes start out as sedimentary, I think.
