Demonstrate how they differ from monomials. Provide a number of examples of each. Then have your son write a monomial and also a polynomial. Ask him to explain the difference. Once he understands, ask him to write a few polynomials: one with two terms, one with three terms, one with four. Encourage him to use some exponents.

Give basic examples like:
a1+b1+c1=0
the most basic and most simple as possible...
and solve it while your son is listening on your explanation, just give a step by step example about polynomials, or buy an idiot's guide book for elementary algebra... ;)
Give a binomial and monomial examples also, for him to know the difference of it. ;)
Then give him a test of how to differentiate it, then after the test ask your son if he really understand it, then If he is still confused, give him another basic test about polynomials, again and again and again,, after he will be familiar about it. ;)
Don't quit teaching him until he masters the basics ^_~
