I wouldn't worry too much. Generally when people get hungry they will eat. I eat generally once a day and have a very active lifestyle. Then there are the days I eat absolutely nothing. Unless there are some factors that make you think he is ill I would not bother him with it. And again try not to worry.

You should talk to him. He's a grown man and there's not a whole lot that can be done. See if you can find out the cause...then express your concern (without mothering/nagging)
Try to explain to him that it's better for his health to eat several small meals throughout the day, as opposed to 2-3 large meals. He'll feel less tired if he eats better....

If he is healthy and normal there is nothing to worry.
The loss of apatite is due to his stress and tension.
Mostly on account of his work and schedule he has to keep.
What does he do on week ends.
He says the same or eats normally.
Take him out for a hill trekking positively.
Report Progress.

Yes I would be worried. Why dont you ask around (his friends or people he is with all day) to see if he does eat or not. Once your POSITIVE hes not eating, then talk to him about it. What is causing him to not eat? There must be something going on in his life. Communication is key.

Tell him to make an appointment with a Gastroenterologist to see what could be wrong. Tell him it could get worse and that his health means so much to you and your family. Remember, not an internist, but a gastroenterologist(stomach doctor).

Try to make him take vitamins like B-12 and drinking Ensure. Atleast he'll get energy and nutrients he needs. Other than that. Hey the man may not be hungry

if he is healthy, he is getting enough food--don't you think as a grown up, he eats when he needs or wants to? he may eat somewhere that you don't know about...

I only eat one meal a day and I'm gaining weight. When you get older you don't need as much food.
