Do you have a bank account? If so bank statements will have your name and address on.
The council tax bill should have both your names on it but then you don't qualify for the 25% single person reduction, bummer!
Maybe get one of the bills transferred to your name, he can carry on paying it even if it's in your name.
Is the house mortgaged or rented? Are you on the tenancy agreement?
Hope one of these ideas helps = )

You need to have at least one bill sent to that address in your name. Also, your driver's license should have his address on it as well. You may want to get a credit card in your name, use it intermittently so that you can establish a "paper trail" at that address and of course the necessary proof that you live there. That's also a good way to establish a good credit rating for yourself (i.e., to have some bills in your name).

The Council Tax should be in both your names, you are breaking the law if you do not tell the Council that someone else is living in the house

Have your name added to one of his bills like a phone bill or gas bill or something..they always ask for a phone bill or utility bill of some kind.. that is proof of address.
