When you say the UK you are speaking of the United Kingdom.
This is made up of several other kingdoms, with various parts united at different times. So it depends on how far back in history you want to go and how much of the UK you want to cover. The house of Windsor is a definite latecomer. So that answer is invalid.
Before the Roman invasion you had a group of kings and chiefs who ruled smaller areas of various parts of the UK.
I would argue for the Plantagenets, descended through William the Conqueror and Henry II and Queen Eleanor of Aquitaine.
They pretty well conquered England and held Wales and Scotland in check, at least.
One can go back farther, but I think this family was the beginning of the UK as we know it today.

The Percy, or Piercy, or Perci, family in Northumberland - came over with the Normans in 1066 and due to some intermarriage actually preceded the Normans. They have held the title Baron Percy since 1066 off and on.
