Because your earlobe isn't at the widest part of your head, hence not what you're really laying on. Also, if you feel your ear, there's a cartilage "base" that sticks out from your head that adds some resistance rather than your ear just sitting flat against it. When you lay on your side, there's enough room, and enough softness of the lobe, to shift the earring sideways if need be so it doesn't stab you. However, I had a few piercings way up in the cartilage for awhile, and trust me, those *did* stab me in the head.

the earring is not sharp enough or long enough to reach the ear while you sleep and your skin is not that thin in order for it to get pierced so easily
