My daughter is also 8 months old and will not eat anything from a spoon. She absolutely refuses. I give her a variety of different table foods. I just make sure that they're soft, but that she can still pick them up. Steamed broccoli, cauliflower, carrots, peas, beans, bananas, peaches, apple slices, cheerios, baby biscuits, egg yolks, diced up chicken, noodles. Their gums are pretty tough and can chew just about anything. Here's a great website that taught me a lot too.

At eight months, pretty well everything. Follow your doc's advice about nuts, eggs, strawberries, honey, etc. Some people believe there are no-nos.
Babies start loving everything once they start tasting. My son was pretty much on table food at six months, because he was not satisfied even on junior food. Make sure you are feeding a variety of healthful things - stay away from pre-packaged stuff with lots of additives and chemicals.

She can have most anything that you eat. Avoid honey, pre-packaged/processed foods, and choking hazards (whole grapes, nuts). Everything else that's soft enough for her to gum up is fair game. Try steamed veggies (broccoli, asparagus, peas, green beans), ripe fruit (avocados, peaches, pears, bananas, melon, blueberries), tender meats, real cheese, cooked pasta (with or without sauce), whole-wheat toast, etc.

Anything that is healthful. Stay away from french fries, fruit loops, candy, chips. tiny cut up pieces of meat are ok, baked pots, cooked carrot, even home made soup. Stay away from sugary stuff, it spoils the taste buds for nutritious foods.

Little bits of cheese, any Gerber food, my doctor also cleared that they can eat mashed up foods (like what you eat for dinner) if its REALLY mashed up. Vegetables are always good, especially if they are cooked. Of course, mashed bananas!
Just make sure that they get enough formula still...
(ask your doctor how much is right for your baby)

any fresh fruit (except strawberries!) just put it in the food processer or blender. Cooked veggies done the same way, just cook them longer then normal. Peas taken out of the shell. Small pieces of pasta (overcooked)

My youngest loves canned peas. It doesn't even require teeth, just the ability to pick them up. Despite what someone else said, children under a year old should NOT have eggs.

Whatever you eat just mash it up - french fries, mash potates, macaroni and cheese, well mashed up chicken, cereal, oatmeal, eggs, rice, etc.
Avoid things with skins like some fruits and no nuts.
