it is a combination of the acidity of the wine and the alcohol. another contributing factor is the tannin which has an astringent (cleansing) feel to it. Like when you're eating a nice pan roasted duck breast which has a nice round fatty mouth feel and take a sip of a killer Australian Shiraz and you feel everything wiped out of your palate before you take another bite of your duck.
