Many things. Metabolizing nutrients, producing and exporting products the body needs, fighting off infections and toxins, regulating the flow of various substances through the cell membrane in both directions.

Depending on the cell; they are doing what they are programmed to do. Stomach cells are making gastric acid, leaf cells are photosynthesizing, fat cells are storing or releasing fatty acids.
