I guess it boils down to what kind of science fair project. If you are doing the basic plants with light vs. plants without light, then you will want something that is easy to grow and maintain. A bean will do nicely here. Radishes are unbeliebaly easy to grow. Plus they mature rapidly.

If are doing a project on genetics, then you could try to inpress and use peas(it is impressive only if you let the judges of the science fair know that you are replicating a famous experiment) Gregor Mendel used peas in his experiments. He is known as the father of genetics. He used peas with different characteristics and cross pollinated them to see what the result would be. He then formed a hypothesis explaining how the new plants received their characteristics.

Depends on what you're trying to demonstrate. If you want seeds that germinate fast, try bean seeds, they are also large sized. Try using the internet to find science projects in whatever you want to show. Good luck

Beans are the classic technological expertise honest seed, because they are going to sprout with in basic terms moisture and no soil, so the technique is totally seen and the soil is bumped off as a variable.

I would think that it would depend on what type of study your doing and how much time you have to complete your observations.

I would imagine that Grass is always an easy to find and durable seed that is reliable and grows just about anywhere. It's strong and needs little care to grow into full potential. You can find long grass, short grass, fine grass, and thick grass, green grass and blue grass, yellow grass and grass that sometimes flower. I don't know just my 2 cents.

Sunflower seeds will work well. Put them in some moist soil and you can see them come up very, very soon. I have them all over my yard because I feed my birds sunflower seed.

Bean sprouts work the same way.

use coriander seeds or fenugreek seeds. you can get them in any indian grocery store. Lima will also work fine.

birdseed is always cheap and germinates quickly, it is usually mixed but you can by tem unmixed from many places. otherwise try marigolds if you want some flowers
