Be nice about it... take her aside (make sure not to do it in front of others) or call her up. Explain how you know she likes you, but you've had your eye on someone else.

Look just ask her to go with you to lunch or to get coffe(the point is to get her away to a place where less people know you.) and sit down and explain that she is attractive and that you know that she likes you but you can't go with her because your with someone and tell her your sorry and hope you didn't hurt her feelings and hope you can be friends. Keep on her good side.
