hey, its not really to do with chemistry but physics. Mentos have a very high surface area which provide points of nucliation - which is where bubbles develop from a solution. The process of CO2 bubbles crashing out of the coke is accellerated by the mentos and in a confined container pressure build up rapidly and you get an eruption. Theres a video on you tube of some bloke doing the mentos eruption in his mouth, it's insane.
