This is the first pool I've had and I'm afraid the new pool will colapse from all the ice we get here in NY. My air pillow under the cover just broke. Now what should I do? Will it be ok if I keep draining the water off of the top?

The pool will be ok. You're best to keep an eye on the cover wtaer level and just at ice in, drain off 1/2 to 3/4 of the water on the cover. Those pool pillows really don't do much for an AG pool. It's sorta a scam. Most AG's where I am (Toronto) don't even use them, period.

you could put a large inflatable life saver under the cover works just as well, or just monitor how much water is on top of cover drain when necessary and break up ice as it form so water keeps moving
