Do not go to Egypt - trouble is brewing. I'm not anti-Muslim, but I've just been there, and their entry control is dreadful, and, as a European white man, I got spat at a lot. I was in Syria next - no problems at all, and when I finished up in Turkey, I was highly impressed with their security - they quizzed me a lot as to what I was doing in Egypt (the stamp was in my passport). 2 hours to get out of an airport is a bit much, but I did not mind - the Turks were very courteous and even fetched me food and a beer. But if the Turks are suspicious about anyone, take note. They are the most militarily competent nation East of Israel and West of Japan. And their security matches.

American Express (and some other places(maybe the post office)) are now offering travellers cheques in the form of a debit-type card. You top-up the card before you go, and use that. It saves having to find somewhere to cash your cheques and you dont incur any fees/interest like you would with a traditional debit/credit card.

I would take travellers cheques. they are much safer, especially in a place like egypt

Just take your debit card - its easier than carrying cash or travellers cheques.
