Not unless you hack into the other person's email account. What you should do is instead of clicking "Send," click "Save as Draft." That way, you'll be able to save it, proof it, and delete it if you're unhappy with it. Once you click send, it is unsendable.

I do not think you can. Once it has been sent, it is sent, no going back. If there is a way, I would love to know.
