Using their real name would kind of take away from the story that's trying to be told, don't cha think?

Because they are not appearing in the movie as them selves, they are portaying a completly different person in the form of the movie character. The actor's job is to create a new person for the movie, to give that person the actor's name defeats the purpose.
What is facinating is the number of movie stars who change their names to something more "Hollywood"

Because Frances Gumm and Norma Jean Baker might not have gotten too far, but Judy Garland and Marilyn Monroe did. And movie actors are still doing it.

Because they are playing a character and use that name. I just
don't understand why animals have to go by a different name in
a TV Show or movie.

It is most likely due to the goofiness of their name or they don't want to be associated with someone else i.e. Nicholas Cage nee Nicholas Coppola.
