To build a good smoker, all you need is a container that is mostly airtight and a heat source. For the container, almost anything will work. I have used a cardboard box, a 55-gallon drum, and an old wooden dresser to make smokers. If the container is something you can easily mount shelves/racks in, then so much the better.
For the heat source, I would use a single-burner electric cooking surface. Uh, these things basically look like the burners on an electric stove, but there's just 1 attached to a base with a cord coming out of it. Some people call it a hot plate, although a hot plate is a different thing.
Anyway, you'll need a smoking pan to put on top of your heat source, so find a heavy-duty, non-coated pie pan or baking pan. Don't use the disposable aluminum ones; a sturdy steel one is what you need. You can use a small non-coated frying pan if you can't find one. Just soak your wood chips in water for at least 30 minutes, then put the chips and anything else you want into the smoker pan. I like to add slices of citrus fruit with the peels still on.
All you need to do is turn the burner on to medium heat, place the smoking pan on top, and place your container over that. Make sure the container is at least 4" away from all sides of the burner, and that that the top of the container is at least 12" from the burner if it is made of something flammable. Within minutes, your smoker will be filled with thick, rich smoke!
