Yes, I am currently doing a clutch job on this vehicle and transmission fluid leaked out of the back when the tranny was dropped. I need to replace this fluid. AutoZone told me it was dextron III ATF. Is this correct?

Actually it's Mercon but the fluid is so much like Dextron III that it's often bottled together.. hince the Mercon/Dextron III

Ford/Mazda has come out now and said you can also use Mercon V which is a synthetic automatic trans fluid in place of the Mercon.

Yes dextron or dextron/mercon 3 is correct, al older Mazdas and manuals are m3 the newer ones are mercon v which is a bad fluid and burns up way to easily. we flush it all the time at out dearler.

yes dextron is correct.make sure the 3 plastic plugs on the top rear behind the shift tower arent leaking while you have the tranny out, these are common leakers and can lead to tranny failure.
