It set fruit in early september and has grown to 18" across, but here in the northeast it is now too late and too cold to develop any further. It is only off-white.

What can I do to bring about the typical dark orange color?

One method is to store the pumpkin with bananas. The gas given off by bananas help ripen other fruit. The pumpken will change color as it ripens, either on the vine or off. I've not tried this with pumpkins.

Make sure that it is a variety that will turn orange. If it is, put it out in the sun.
