Why do comedians make fun of women's behavior so much?

First of all, the soul of humor is the recognizeable but unexpected punchline. The joke is in something that is both, so to every joke, there must be an underlying truth.

Take a Redneck joke like "If your house is on wheels and you own two cars that aren't....". Anyone that spent time around rednecks has seen someone that fits that, so it's recognizeable, but people that never connected the two before find it to be a surprise, and therefore funny. Change the last lines to "...you might be a Certified Public Accountant" and it's not funny anymore, because no one sees the connection.

So the reason why women's behavior is the subject so often is because comics think that most of the audience will know at least one woman. CPA jokes would depend on people knowing CPA's. A number of lawyer jokes (the ones lawyers tell each other that you never hear) depend on a working knowledge of law, possibly some knowledge of Latin. These would never have general appeal. Everyone knows at least one woman, so the comic just has to notice some common behavior that can be taken slightly out of context and used as a punch line for a gag.

As to why women's baffling behavior is used more often than men's baffling behavior, it's because the audience will be both men and women. Men tend to believe their behavior is largely logical, so they don't see the humor. Women know that their behavior baffles men, and even if the behavior in the joke makes perfect sense to them, they find the befuddlement it causes men to be absolutely hilarious.

Because womens moods and attitudes change more than the weather. They are totally unpredictable which leads to all kinds of situations.

I know that, I at least, get mad over silly things and stuff like that. You have to be able to laugh at yourself.
