Food allergies or sensitivities can have that effect, yes. If you're allergic to a particular food or drink substance it can irritate the lining of your bladder and cause you to need to urinate often, and urgently. In some cases this sort of sensitivity can also cause you to wet the bed at night. This is probably more true for mild sensitivities than major allergies, since if you had a major food allergy, bladder problems would probably be the least of your concerns.

As far as other sorts of allergies like dust, pollen, hay fever... I don't think I've ever heard anything about these causing bladder trouble, but I would be interested to know if they did, as I've also struggled with both for most of my life...

I never heard of them causing any bladder problems unless they make you cough so bad that you have to pee...
