Go into iTunes, click on the iPod option, choose the songs you don't want any more, rightclick, and delete/remove.

In iTunes, go to your iPod and delete all the songs you don't want. Then go to the Library and uncheck the same songs, so that it doesn't go back onto your iPod again.
