Sarcasm is trying to reveal through words or actions the 'feigning' about someone's effort or desire to be the real thing, with an intent to reach the victim's perception about the need to 'feign' (not happening of the event)... example... a person widens his eyes and tells a not so good looking woman trying to give some fine touches to her appearance "Never have I seen a beauty such as you (the over exaggeration is the sarcasm)".. there is no joke in it, sarcasm usually aims to hurt the victim/targeted person.
Joke aims to reveal the funny side of life, and basically aims to evoke laughter , the hurt to anyone just a coincidence or consequence.

Sarcasm is a way of expressing a truth. Usually has double meanings and sounds okay on the surface, until you realize the hidden meaning, which usually applies to yourself.
A joke is said in jest for pleasure; even a joke can be sarcastic, and be a way of showing someone that their way of thinking is perhaps not the ONLY way of thinking.

joking is for a laugh for everyone, not hurting anyone. Sarcasm is meant to tell someone something just not telling them straight to there face but in a laughing way and can hurt them very much. Others may join in which cause more hurt.

Joking is saying something that is a joke or telling a joke. It is meant to be funny or play with a person on a practical level or maybe a higher level.
Sarcasm is a statement that is meant to be a known statement that is false. Sarcasm can be funny or not funny, so it is not always a joke.

Sarcasm is a statement made to offend or belittle a person that makes the person saying it seem more 'smarter' in what ever the context. Usually is said in disgust or anger.
Joking is out of fun. To point out a person's imperfection in a way that is amusing and entertaining.

A joke is usually a play on words, requiring recognition of double meaning in semantics. We laugh because it is familiarity with a twist.
Sarcasm, however, is a twist in tone and connotation. While a person may SAY "thanks a lot", it is understood that the opposite meaning is intended. Sarcasm CAN be funny, but it is most often unkind.
