Did they really think no one would notice when a different actor started playing Samatha's husband, or couldnt they come up with a better way to make the switch?

it doesn't matter whether 'no one would notice' - they're trying to preserve continuity. (except for Zephram Cochrane in ST:TOS and ST8:FC - continuity was shot by that point)

Dick York (the original Darren) had a back injury and could not work. They had to make a decision: bring in a new actor, kill Darren off, or cancel the show.

They knew, but it was a 'wink-wink' thing as they believed the audience would buy the fact that a witch had a husband who looked and acted different. No harm intended, I am sure.

They knew but they had to replace him in order to keep the show going because he was a big part of the story line.

Both Darrens at least looked similar and they didn't try to find a sexier one.

They were both named Dick, Dick York and Dick Sargeant, Sargent York, Hmmm. I don't thik they cared so long as the ratings held up and they did.

i'm sure they kknew most people would know but i didn't mind it. i thought both men were good at the part. LIke the cow!!
