I believe human beings discriminate against each other because of a lack of knowledge, strong ideals, the way they were raised, and for self-esteem.
There is a saying that hatred is hatched from not knowing, turning into fear, and then, sometimes, hatred or discrimination.
Sometimes our ideals might not be shared by the other party, and you think that they are wrong. You just HAVE to be right. Then you might think that the other party is dumb or ignorant because of that, sometimes resulting in discrimination. Meaning that this does not always lead to that path. A strong set of ideals can be a good thing too.
Other times it is not because of ideals, but because of difference. We think just because someone is different that they are bad or such of the sort. Or maybe you might have asked someone a question and they did not respond the way you may not have anticipated.
We humans are also greatly affected by our experiences in childhood. Manners and ideals of a person mostly form as we are young. Also, as an adolescent, children are affected much by their parents. Perhaps the said parent(s) are discriminated/stereotyped against (or with) a said person, race, religion, etc., then his/her/their child my grow to be the same. It is relative to the saying: You can't teach an old dog new tricks.
Sometimes, in order to feel better about yourself, you might look at the downsides of other people. Say you are fairly thin, though you may not think so, and you see a rather plump person. You might tell yourself that "thank goodness I'm not like that", or "omigod, that person is so fat" to feel better about yourself (or because you are not used to seeing someone of that size.)
Another example is that you are very good at a certain thing. Then you find another person who is not. In that you might think that that person is very stupid or the like.
Also, discrimination can result from life experiences, especially bad ones like that of the 9/11 terror. Because of that, I believe that many people are now more discriminative against Muslims than before 2001.
Although my answer may not be perfect, I hope this helps.

I honestly wish I knew, but I don't. The best I can come up with is people discriminate because at some point in their lives they were taught to do so, or they experienced something that made them feel and act in the discriminate way that they do.
Unfortunately, when someone is taught to think a certain way it can be difficult to change their mind set. And, when someone has a negative experience with a person, they may think that all people that share similar characteristics with the person that wronged them also share the same views, ideals, habits, and whatever bad characteristics that person has.
I mean, if you can manage to change a person that discriminates that is great, and I use discriminate in very general terms. But if you can't change them, don't let them change you.

This is due to their imperfection. God did not create man to discriminate against one another. God is love (1John 4:8) One day very soon by means of his Kingdom in the hands of his Son, Jesus Christ, will rid the earth of all injustice and all of those who selfishly promote discrimination and hatred, racial or otherwise. (Daniel 2:44; Matthew 6:9, 10) Then, with a perfect educational program under the administration of Christ, all races will truly become united. As that education progresses, they will live in perfect harmony without any trace of racial discrimination. God’s promise will finally be fulfilled: “The former things have passed away. . . . Look! I am making all things new.”—Revelation 21:4, 5.

Because we are all jerks.
Not one of us doesn't discriminate in some fashion or another. It's the same reason we like some food ans not other food. One type of clothing and not another. Some people are dog people, other's are bird people.
And you want to know the weirdest thing? For each one of those choices, the person making the choice usually thinks that they are right. Now multiply that by 6.5 billion people on the planet and there is your answer.

"Discriminate" means to differentiate or to distinguish. Humans can only differentiate themselves, their culture, their beliefs, and their values, from those of other individuals (or groups of individuals) through use of discrimination. So, "discrimination" is a natural psychological function for human beings. Without the psychological ability to discriminate, it would be impossible for an individual, society, or culture to maintain their identity.
However, discrimination becomes evil when it results in the oppression of other humans, when the values, ideas, or beliefs of other individuals are suppressed, depriving them of their natural and God-giving right to equality, creating prejudice and spreading injustice.

Comparison is the nature of mind, Discrimination is the logical fallout of this comparison. It requires a balanced emotion that transcends the logic to be able to rise above this natural tendency of discrimination , way beyond the logical acceptance of comparable differences !

Human beings discriminate eachother, I believe, because it is in our nature to feel secure, and when we do not understand another persons culture; belief system; traditions; it automatically creates a feeling of isolation and awkwardness; thus, humans disliking the feeling of isolation or should I say feelings of alone/loneliness; the individual feeling alone, creates an energy vibe or barrier to make him/herself feel safe & secure which is then revealed in verbal, emotional, visual; physical or pshychological discrimination.

Discrimination isn't just a Human Being thing. Dogs don't like cats. Cats don't like mice. Mice don't like scientist. Discrimination transcends all living beings.

I think because it is human nature to turn away frome difference in people or otherwise, especially for those who do not or do not attempt rather to get to know people who are what they percieve as different. Knowledge is wisdom. If something is foreign to people they feel uncomfortable. Those who do not seek to understand others and then can relate as humans cultivate indifference, discriminantion. Not to mention it has been bred in since the beginning of time really.

Ethnocentrism and other issues come into play when dealing with discrimination. What many people seem to forget is we are all from the same cloth and come from the same cradle years ago so to speak and when you do something to spite your brother you are in actuality hurting yourself. We need to get over it and get on with the business of living!
